Lentil sauce with pasta

For 2 servings of sauce you need:
• 1 cup of red lentils
• 2 spoons of olive oil
• 2 spoons of Moringa powder
• 2-3 spring onions
• 1-2 cloves of garlic
• 2 medium size tomatoes
• pieces of sun-dried tomatoes
• salt, pepper
Fry the chopped spring onions and garlic on olive oil. Than add a cup of lentils (dry) and continue to fry together for about 5 minutes.
After about 5 minutes, when tomatoes release juice, check how much water we have, add more water if necessary and simmer for about 20 more minutes, until lentils are soft. Shortly before finishing cooking add a pinch of pepper, Moringa and a few pieces of sum-dried tomatoes. Let simmer for a few more minutes.
This sauce may be served with rice or pasta. For other meals, I choose wholegrain pasta, but this time we serve the sauce with legumes, so we can use classic white pasta.
